ELEVATION: 310 - 320 M. above sea level TYPE OF CULTIVATION: Guyot low Piemontese with 6.000 vines per hectare. SOIL: Predominance of sands dating back to the Astiano with sandy layers alternating with small sandstone in brick red layers which, when mixed, make the soil particularly permeable and light. HARVEST: Handpicket and put into small baskets. CLIMATE: Characterised by wet currents from the south of the Atlantic Ocean, precipation levels are among the lowest in this area, between 650 and 720 mm per year, with maximum seasonal rains in the spring and in late autumn and the minimum during the months of July and August. AVERAGE GRAPE YIELD PER HECTARE: 70 Quintals. WINEMAKING: After removing the stems and stalks, fermentation with a submerged maceration is performed for approximately 20 days, with daily culling and mixing during the first week.
