Piemonte Bonarda denominazione di origine controllata VINE: 100% Bonarda Piemonte (Roero region). EXPOURE: South, Southwest. ELEVATION: 350 meters above sea level. TYPE OF CULTIVATION: Low Guyot, classic Piemontese. SOIL: A predominance of yellow sand, more or less stratified, with gravel or marl in between the layers of sand, as lound in typical cross-sections of the middle Pliocene. The soil is light sandy and permeable, with an alkaline pH. CLIMATE: As is characteristic of most parts of the Roero region, precipitation levels in this zone are within those found in the lower elevations of the Province of Cuneo, and average between 650 and 720 millimeters for year, with maximum seasonal rains in the spring and autumn, with the minimum during the months of July and August. PLANTING PERIOD: 1995. HARVEST METHOD: Handpicked and put into plastic buckets. DATE OF HARVEST: last week of September and the first week of October. AVERAGE GRAPE YIELD PER HECTARE: 80 Quintals (approx. 4 tons). WINEMAKING: Gentle removal of stalks and stems, with submerged fermentation with frequent mixing. The fermentation lasts between 8 and 10 days at a controlled temperature of between 28° and 30° Centigrade. After the wine has been racked off, and the malo-lactic acid fermentation has been performed, the product is kept in vats until it becomes nearly sparkling: in fact, carbon dioxide (CO2), which provides the light effervescence, comes from the natural second fermentation occurring inside a pressurized vat with selected yeasts. IN BOTTLE MATURATION PERIOD: The wine matures in stainless steel until mid-spring. It then ages for one month in-bottle. WINE SPECIFICATION PIEMONTE BONARDA Alcohol percentage: 12,50% vol. MEALS TO MATCH WITH: When young, it is well adapted to roasted white meats, and is superlative with grilled beef and pork. It is an optimal choice for tagliatelle with meat sauce. As it ages sleghtly, it is perfect for roasts (especially of wild game) and spicy cheeses. PACKAGING: 6 - 750 ml bottles packed in boxes.
