VINE: 100% Arneis (Monteu Roero area).

EXPOSURE: Southwest.

ELEVATION: 300 m. above sea level.

TYPE OF CULTIVATION: low Guyot Piemontese with 5.800 vines per hectare.

SOIL: a predominance of yellow sand, more or less stratfied, with gravel or marl in between the layers of sand, as found in typical croos-sections of the middle Pliocene. The soil is light, sandy and permeable, with an alkaline Ph.

HARVEST: Handpicked and put into plastic brackets.

CLIMATE: Characterized by wet currents from the South of the Atlantic Ocean, precipitation levels are among the lowest in this area, between 650 and 720 mm per year, with maximum seasonal rains in the spring and in late autumn and the minimum during the months of July and August.

AVERAGE GRAPE YIELD PER HECTARE: 60 Quintals.

WINEMAKING: begins after gentle removal of the stems and stalks to avoid breaking the grapestalks and grape seeds, which, otherwise, would damage the wine quality. Skins and must should not be kept in contact for too long: if not, negative polyphenols will appear. Then claring is performed through filtering and refrigeration. Afterwards fermentation starts with selected yeasts at a low temperautre for about 15 days; the the stabilisation and decanting can proceeed.

FILTERING: done through a mirofilter.

WINE SPECIFICATIONS ROERO ARNEIS Alcohol Percentage: 12,50% vol.

MEALS TO MATCH WITH: fish prepared with savory sauces; meals based on eggs, cream of vegetables soup; risotti and tagliolini with butter and sage.
